There are some foods you try once and immediately wonder, “Where have you been all my life!?” That was me with Brazilian cheese rolls. Cheese and bread are two of my greatest loves. When a friend told me about Brazilian cheese rolls, I knew I absolutely had to make them. They turned out SO good! I am in love with these rolls, and my family loves them too. When I make them, they disappear in a flash! They’re easy and quick to whip up, making them a perfect snack for any occasion. No kneading, no waiting for dough to rise, just blend, pour, and bake! Whether you need a quick snack or a side for dinner, these rolls are always a good idea.
What Makes Pão de Queijo Special?
Brazilian cheese rolls aren’t your typical bread. Unlike traditional wheat-based rolls, these are made with tapioca flour, giving them their signature chewy, stretchy texture, and making them naturally gluten-free. They have a slightly crispy shell, a soft, almost gooey middle, and an amazing cheesy flavor. Plus, you can play around with different cheeses and seasonings to fit your tastes.

Ingredients
1 cup milk
½ cup avocado oil
2 cups tapioca flour
1 teaspoon salt
2 eggs
½ cup grated cheddar cheese (medium or sharp)
½ grated parmesan cheese
Optional:
Garlic powder – I like putting garlic powder, gives it a good flavor
Herbs – like oregano or thyme
Chili flakes – for a hint of spice
Extra cheese! – mix in different cheeses for different flavors, or sprinkle some on top before baking


Instructions
Preheat oven to 400°F.
Spray a muffin tin with non-stick spray, or rub with butter.
Add all ingredients except the cheeses and blend until combined and smooth.
Add cheeses and blend again until fully incorporated.
Add to muffin tin, fill each well ¾ full (Don’t let the batter sit too long, or the cheese may settle at the bottom.)
Bake for 15-20 minutes, or until the rolls are puffed and golden.
Serve warm for the best texture.
