Peanut Butter Oat Bites

I know that this is my second post today 🙂

I couldn’t wait until tomorrow to post this recipe and a few more pictures of the doves! 😉

And nop, my husband doesn’t go hungry all day, neither my daughter. My daughter has her diapers changed everytime it needs to be done. I even had the time to read a few stories to her and to do the laundry – 3 loads!!!

Oh, and we went for a morning walk and were able to take an advantage of estate sale. Too bad I didn’t have my camera with me. I don’t think thy would let me take any pictures of the inside, anyway.

Back to my cookies!

So you know, they are very peanut butter(y), and you can’t eat lots of them at once! maybe one or two. really. but they are pretty good.

To make them you’ll need:


2 Tbsp. unsalted butter

2/3 cup creamy peanut butter

1/4 confectioners sugar

3 Tbsp. honey

1 tsp. vanilla extract

1 1/2 cups Rice Krispies cereal

1 cup quick oats

1/4 cups raisins

1/4 cup mini chocolate chips

1/4 cup finally chopped lightly salted dry-roasted peanuts

Melt butter in a medium saucepan over medium heat. Remove pan from heat, than stir in peanut butter, confectioners’ sugar, honey and vanilla.

Allow mixture to cool and stir in Rice Krispies…

…and oats and raisins. I did not have mini chocolate chips so I didn’t use them, but if you have them this is the right time to add them, as well 😉

Form mixture into 1-inch balls, then roll each ball in chopped peanuts (I did not use them).

Store in an airtight container in refrigerator.

AND… I couldn’t help myself.
