I’ve made this one a few times. It’s delicious.
Right now I just bake whatever vegetables I have in my kitchen, but the base is always potatoes, onion, and cherry tomatoes.
Today I should say that this recipe is mine with Racheal Ray’s base.lol
If you want to know how to make it – it’s easy. Cut vegetables, mix with olive oil and your favorite spices, bake in 350 F for 30 to 40 minutes. I always split vegetables on two baking sheets. One with potatoes, and onion is going first. The rest vegetables are going to the oven 10 minutes later, so they don’t get burned.
Today at the Farmers Market I have found purple potatoes, and I decided to give ’em a try.
Not so much my honey, but I loved them 🙂

I have found some information about them. One website says that they were developed in 2006 by Colorado growers. Differnt one is saying that: This potato is claimed to have been brought to America by an Irish family who shared the seeds with other growers. while somewhere else you can read that Examples of this variety were smuggled into the United States from Peru in a diplomatic pouch around 1957 (…)
While cooking they change the color from purplet to blue. The best way to presevre the color while cooking is microwaving (supposedly the best way), but steaming and baking work well too.
